Tomatoes Tomato Ketchup, homemade and blended.

Basic ingredients:

10 kg tomatoes, chopped
2 red peppers, seeded & chopped
2 green peppers, seeded & chopped
4 small onions


1/2 tsp. ginger
1/2 tsp. allspice
1/2 tsp. powdered mustard
1/2 tsp. chili powder
1/2 tsp. cinnamon
1/4 tsp. pepper

Water activity depressant:

2 1/2 cups sugar
2 1/2 cups vinegar
1 tbsp. salt

Texturizer and Thickener:

15 g ViscoStar 4141
1 cup water

Combine the basic ingredients and cook tender for 30 minutes.

Blend on high speed for 5 seconds and screen.

Combine spices in a bag and cook with remaining ingredients - except starch and water - for 30 minutes. Modify spices to taste.

Mix ViscoStar 4141 and water. Pour into ketchup. Boil for 15-20 minutes. Adjust ViscoStar 4141 to proper viscosity.

In case of low pH  ViscoStar 4221 is a better choice.
